Guess what? You NEVER have to waste ginger. You peel it, put it in a zip-top bag and freeze it. I used some a few months ago for Sweet and Sour Chicken and I froze the extra, then I pulled it out and used it for this recipe. You don't even have to let it thaw to grate it. Then, I popped the rest back in the freezer for next time. It will last for a quite a while in there. That is too funny you were worried about wasting it. I was just telling my husband that I wanted to conquer cooking more chinese since we don't go out anymore. Chinese is the thing that we both miss the most and usually splurge on a few times a year. I am going to have to check into this chili paste. I also really need to get over my fear of wasting the ginger which is the main reason that I have never bought it and I have a million recipes stocked up that need it.
