I have searched for years for a home made chocolate chip cookie that doesn't turn out bread like or too cakey. I have never been able to find a cookie with the right consistency on the outside. A cookie that has the slightly greasy/ slightly crunch exterior. Most of the time the other recipes turn out to be more of a flat muffin consistency and not anything like a cookie you would buy in a bakery.I actually gave up and refused to make them for years. They never turned out the way I hoped they would. This cookie is perfect. I truly believe that it the right texture because of the corn starch. This is my new chocolate chip cookie recipe and I just had to comment on it. After that, I realized I just didn't mix the dough enough and I haven't added any water ever since. The dough will seem a little crumbly, but it will come together if you mix it a little longer.<br /><br />I have never had a problem with my cookies being crunchy or fat. They have turned out perfect every time. Maybe an ingredient was accidentally missed? Or maybe something was expired? <br /><br />I cream my butter and sugar until it looks really creamy and whipped looking. It will not be clumpy at all. P.S. I can only get it super creamy when I use my stand mixer. When I use a hand mixer, it never seems to get as creamy no matter how long I beat it for. Yes, you can still feel the sugar grain in the butter. <br /><br />No, I don't sift the flour.<br /><br />I'm sorry these didn't turn out for you, because they really are amazing. Maybe it is something to do with different altitudes.
