Homemade Freezer Breakfast Sandwiches

Why didn't I try this sooner?  

I have been eating a piece of wheat toast with peanut butter for breakfast for as long as I can remember.  

With the weather getting colder, I wanted something warm and hearty for the early morning.  It's dark when I wake up and it's still dark when I leave for work each morning.  There is no possible way I would ever wake up earlier (this girl needs her beauty rest) to actually cook me an egg and put this sandwich together.

That is why this Freezer version is perfect.  I prepared them on Sunday.  Then, each morning throughout the week, I grabbed one out of the freezer, wrapped in a paper towel and microwaved for a few minutes.  It doesn't take any longer than a piece of toast.  They really do taste great.  
All you do is crack your eggs into ramekins and season with salt and pepper.
Bake the eggs and remove from ramekins.  Put sandwiches together, then wrap in plastic wrap and freeze.  

Super fast and easy.
Freezer Breakfast Sandwiches

5 English muffins
5 large eggs
5 slices Cheddar cheese
10 thin slices deli ham
salt and pepper

Preheat oven to 350 degrees.  Spray 5 ramekins (or a jumbo muffin tin) with cooking spray and place on a cookie sheet.  Crack one egg into each ramekin.  Pierce each egg yolk with a fork and very slightly beat.  Season with salt and pepper (I like lots of pepper).  Bake eggs for 12-15 minutes or until set.  Remove from oven and cool slightly.  Run a knife around the edge of ramekin and flip over to remove eggs.  Allow to cool while you prepare the remaining ingredients.

Slice English muffins in half.  Layer each with one slice of cheese and two slices of ham and one cooked egg.  Top with other English muffin half.  Wrap tightly in plastic wrap and place in the freezer.

To reheat:  Remove plastic wrap from the frozen sandwich and wrap in a paper towel.  Microwave at 50% power for 1 minute, flip over and microwave for 1 more minute on regular power.   

Jenn's Notes: I think these taste great and they are a perfect on-the-go breakfast.  I ate mine plain, but they would be good with some ketchup or salsa.

  1. I got all the stuff to do this awhile back, but I got bagel thins b/c my kids don't like English muffins. I never did it b/c I didn't want to fry each egg infdividually. I never thought to bake them. I will have to get those bagel thins out of the freezer now and use up some of the 12 dozen eggs I have in the freezer.

    1. Yes, definitely try them. Baking the eggs was so easy and I didn't think they had a weird texture or anything. Let me know if you try them and what you think of with the bagel thins. - Jenn

    3. I always make enough for one week and then I will make them again for the next week. So, I haven't tried them any longer than that.

      Do the English muffins become soggy when cooked in the microwave coming from the freezer?

    5. I wouldn't say soggy, but soft - yes!! Some people have heated them up in a toaster oven instead of them microwave and that way they are crispier. I always use the microwave. Jenn

    6. I toast my engish muffins before I assemble them that way they have a crispier texture even if microwaved. Takes a couple extra minutes but my son loves them that way.

    8. I make a breakfast sandwich similar to this, but I cook the egg in the microwave. In the time that it takes to toast the bagel thin, I can cook the egg (45 sec), warm the ham and cheese (15 sec) and assemble. To cook the egg in the microwave, spray a bowl with non stick spray, put the egg in and lightly stir. Add salt & pepper. Cook on high for 45 sec. **I also use jalepeno Velveeta for the cheese to really wake things up!

  6. I have made these before, I we couldn't eat them after they been frozen, my family didn't care for them, the eggs went kind of werid - did you find that happen?

    2. When you microwave anything, including eggs that are already cooked, it sucks all of the remaining nutrients out of the food! Microwaves are horrible for health, and horrible for trying to cook food. When you get up, turn on the oven to 375. Wrap it in parchment paper, put it in the oven, 10-15min later you have a warm sandwich with the cheese melted, with all nutrients in tact! Just time it for when you are going to leave. You can also wrap in a cloth napkin to take with you to keep it warm!

  7. I LOVE this idea but I've tried both the microwave and the oven suggestions for cooking and the egg always seems to take a lot longer to cook than everything else. By the time I get the egg edible, the rest of it is molten, any ideas?

    1. Are you talking about microwaving them after they have been frozen? The egg is already cooked, so you just have to heat it in the microwave long enough to warm up the egg and the rest of the sandwich.

    2. I used to have this problem, even with the store bought ones. Put them in the fridge the night before. They have time to thaw out then and that means the eggs get hot faster. It saves the cheese, etc from getting TOO done.

  8. But have you tried the Nordicware Microwave Eggs n Muffin Breakfast Pan? I put a frozen sausage patty from Aldi's (just the right size) on the bottom, an egg or even two on top and prick the yolks with a toothpick, pop an English Muffin in the toaster, put the Eggs n Muffin pan into the microwave -- and 2 minutes later, you have a wonderful fresh breakfast muffin -- no muss, no fuss and it's really good and wonderfully quick as you head out to school or work. Everybody in my family loves them and swear they better than stopping at McD's.

  10. THANKS for the post! :) Just popped these in the freezer. I used turkey bacon and did half with croissants and half with the hearty english muffins. Made a dozen, ate one for breakfast. Ha! Thanks again.

  19. I have been making these breakfast sandwiches for sometime now and what I have found easy to use is the microwave scrambled egg cooker. Scramble the egg slightly in the cooker and place in the microwave oven for a minute, take out an stir the egg one more time and return to the microwave for another minute. There you have the perfect size for an English muffin. I also use the round sausage patties and microwave them, then cool and assemble. Seems faster and less trouble then using the ramekins and the oven.

  20. These sound amazing! I'm wondering if I could do these for a camping trip our family is taking over Labor Day weekend. There is going to be about a dozen of us so I'm looking for things I can cook or prep ahead so I'm not slaving over meals the entire holiday. Do you see any reason why I couldn't put these together at home... wrap them in foil...so they can be thrown on the campfire whenever someone wakes up and wants to eat???

    1. As long as you've got them wrapped well in some heavy duty foil and are putting them on the grill grate or way off to the side and not into the fire I think it'll work great! I would NOT try to heat them from frozen though, just refrigerated. Crock pot oatmeal is another great choice for a big group eating at different times if you will have access to electricity.

    1. Yes, you could make these ahead, wrap in foil and freeze them. The ingredients are already cooked, so you will just have to warm them up. The comment up above suggests throwing it on the fire when they have been refrigerated and are no longer frozen. I haven't tried either, but it should totally work.

  22. I just put these together. sautéed onions & bell pepper & added to eggs. Tried in 2 sizes of ramekins, small for biscuits, large for muffins. Perfect! Now I guess I will start eating breakfast more often!

  23. I have made these before and they were great. I don't have ramekins so I baked the eggs in a muffin tin. A little smaller but still works.

  24. When I make these, I separate the muffin from the rest and pop it in the toaster. Meanwhile, heat the ham, egg, and cheese in the microwave. So much better with a crispy english muffing.

    1. I have never used a toaster oven before, but I'm sure it would work just fine. I also have never cooked eggs in a slow cooker. I would try the toaster oven.
