Kelley's Fiesta Dip

This is another delicious recipe that is part of my review of Gooseberry Patch's Simple Shortcut Recipes
I made a half a batch of this dip, since there would only be two of us eating it.  I served it on some nachos on Thursday, ate it as a snack on Friday night and for lunch on Saturday.  It was delicious plain and on nachos.  I also think it would be good in a quesadilla or in a chicken enchilada.  Between the two of us, we finished it off in no time.  I guess you could say it was a hit with us!

It is super easy to throw together and it makes a lot, so it's the perfect dip to serve at a party.  The best part is you can make it a few days ahead of time, so no stressing last minute.  The recipe says to chill for at least 24 hours before serving, but I did eat some immediately after it was made and it tasted amazing.  The only difference I noticed after 24 hours of chilling was that it had thickened.  You can serve it cold or you could keep it in a small crockpot and serve it warm.  It was good cold, but I preferred it warm.

8 oz. pkg. cream cheese, softened
16 oz. container sour cream
11 oz. can sweet yellow and white corn, drained
15 oz. can black beans, drained and rinsed
10 oz. can diced tomatoes with green chiles, drained
1 1/2 Tbl. salsa seasoning mix (I used taco seasoning)
2 c. shredded sharp Cheddar cheese
tortilla chips


In a large bowl, mix all ingredients.  Cover; chill at least 24 hours before serving.  Serve with tortilla chips.  Serves 10-12.


Jenn's Notes: I used fat-free cream cheese, but full-fat sour cream.  I'm not sure what salsa seasoning is, so I just used taco seasoning.  This dip tasted amazing!

  8. Have you ever tried this dip replacing the sour cream with Greek yogurt? Seems like it would work. I'm a newbie with Greek yogurt, but would love to lighten things up a bit if possible.

    1. I love Greek yogurt. I have not tried it in this particular recipe, but I have combined it with salsa and it made a great dip. I totally think it would work in this recipe, it might just change the taste slightly? You could always do 1/2 yogurt and 1/2 sour cream. -Jenn

  11. Made this tonight.. I loove it! I put Extra taco seasoninh and also salsa.. I bought some thinking it called for so i said oh well.. I put about 2 or 2 1/2 tbsp of salsa.. Loved this.. Bought tortilla but thinking scoops would be better

  12. Great dip! Thanks for posting! For those who want a little more of a kick...I would add either another packet (or half) of taco seasoning, or see if there is a spicy version of the seasoning. Spicy Rotel instead of Original would be another option!

  13. They had something similar to this at Costco recently that I bought and absolutely LOVED, it disappeared so fast. I tried to go back and get another one, but was told that they wouldn't have it in stock anymore. I was so sad, until I found this, because it looks SO similar! I can't wait to try making it!

  14. I looked up Salsa Seasoning Mix and after learning what it was, I remember seeing it at Walmart. It's used in making salsa when you can tomatoes. You can find it next to the canning materials, like mason jars and such. Looking forward to making this for a snack this weekend!

  15. I wonder if you could use this to spread on tortillas, roll up and slice into rounds/spirals. I had something similar to this made that way but could never find who made it to get the recipe.

    1. That sounds wonderful. This dip might be a little soft to stay inside the tortillas, but I say it is worth a try. If you add less sour cream it will be a little thicker.

    2. If you eliminate the sour cream and substitute a little chili powder for the salsa seasoning, they work great on the tortilla shells. I make the pinwheels like this every New Years and they disappear fast!!

  16. What brand has sweet and white corn? Or is a can each?

    1. No, it is not a can of each, it is one can total. I'm not sure what brand has it, but you can just use one can of regular yellow corn if you can't find it. - Jenn

  17. I wonder if fresh diced jalapenos would be a good addition for that extra "kick". I just finished making this and I love it! I bet it would be even better, if you like spicy food, if I added the jalapenos.

  18. We made this last night. Fantastic! If you wanted more a of a kick, you could do like others said and add more taco seasoning or I was thinking even buffalo sauce? However, we made it exactly as the recipe called for it and even ate some right after mixing- sooo good. Had some for lunch today, still great! Thinking of adding something to add a little kick to the rest of the batch, but either way, TASTY and EASY recipe! P.S. We used Tostito Scoops- great for this kind of thicker dip!

    1. Have you ever used chipotle chili powder? It has a slight smokey flavor and it is pretty spicy. That might add just the kick you are looking for :) I am so glad you liked it - thanks for letting me know.

  20. Just made this today and have it in the fridge for tomorrow. I already tasted it and it is so good! I left the tomatoes out (personal preference) so they aren't a must if anyone else is considering leaving them out. :) Thanks for posting the recipe!

Made this tonight 12/18/14...I was torn between this recipe and the regular corn dip recipe...The raw diced onions in the regular corn dip recipe was a turn off for me...With that being said, I found that this is a good base for a dip, but it needs a little rescuing...It screamed for green onions, so I added some. I used more seasoning than stated bc it needs more flavor, and it can definately use some heat...Between the cream cheese and the sour cream, it can handle it. I look forward to seeing what the party goers think...I will keep playing around with this one bc of its flexibility and ability to hold flavors..thanks!
