Easy Lo Mein

These noodles are WAY WAY good and SO DANG EASY!

The flavor is perfect.  The soy sauce is not overpowering at all like it sometimes is.  The amount of sesame oil called for is just right.  I can taste it, but it isn't overpowering either.  I recently looked up a recipe that called for 3 Tablespoons of sesame oil.  Holy cow.  I have used that stuff enough to know that is way too much and would have ruined the dish.

Three cups of slaw seems like a lot, but it somehow disappears when you add it and you could even even add more.

I use angel hair pasta noodles, because I always have it on hand.  This has become a go-to recipe and I make it all the time.

I swear, this one is a keeper, you gotta try it!

Easy Lo Mein
4 Tbl. soy sauce
2 Tbl. rice wine vinegar
4 Tbl. brown sugar
1 tsp. sesame oil
2 tsp. fresh ginger, grated
2 tsp. fresh garlic, minced
1 tsp. Sriracha hot sauce
2 tsp. cornstarch
2 tsp. canola oil
3 heaping cups coleslaw mix
1/4 c. green onions, chopped, opt.
8 oz. angel hair spaghetti noodles
   or chinese egg noodles

Cook noodles according to package directions.  Meanwhile, in a small bowl, combine the soy sauce, rice wine vinegar, brown sugar, sesame oil, ginger, garlic, sriracha and cornstarch; whisk to combine; set aside.  

Heat the oil in a large skillet over medium heat.  Add the coleslaw mix and saute a few minutes or until crisp tender.  Add the sauce, the cooked and drained noodles and green onions.  Toss together to combine.  Cook for a few minutes and serve.  Serves: 4-5.

  2. Found your website via FoodGawker. I have looked through all your Mexican dishes because I was born and raised in Austin, Tx and our nanny was from Mexico. We were raised on Mexican food. Oh man, I still remember making tortillas everyday.

    My favorite enchilada uses a brown "gravy". Try doing a search for it...it's hard to find. I'm perfecting mine now. It has much less chili powder thus the "brown". It is delicious!

    I like your salsa recipe and will try it! With mine, I achieve a deep flavor by roasting my onion, jalapenos and Roma tomatoes.

    My cheese of choice with all Mexican dishes is Monterey Jack. I also like to use Pepper Jack and White American (found only at my deli counter).

    While I am not one to follow a savory dish exactly as written, I do have to document exactly how I adjust things so my hubs can make it too. I unfortunately have seizures and often lose a lot of my short term memory for weeks afterwards.

    I've always wanted to start a blog but instead I type out my recipes and have books printed and bound. I have two copies of each so I can pass one down to my daughter and have the others out on "loan" to friends and family. I look forward to reading the rest of your recipes!

    1. Mexican is my absolute favorite food. If you ever feel like sharing some of your favorite recipes, I would love to try them. I can imagine how roasting vegetables gives them an amazing flavor, I'll have to try that next time.

  5. Best thing about this recipe is that I have all the ingredients at home! I've been stressing over using up the rest of this coleslaw mix before it goes bad, and I just found my winner!

  11. What is coleslaw mix? Just chopped cabbage with carrots??

    1. Yes, it is found in the produce section by the bagged lettuce, but you can just use chopped cabbage and shredded carrots if you like. - Jenn

  13. Hi Jenn, I wanted to comment because every other reviewer said that they *will* try it. The reviews are often useful and I always appreciate review from some who have tried it already. I DID try it today and I am so happy that it was is as DELICIOUS as you stated. The flavor is so close to what I've found at various Chinese restaurants! I am so thrilled. I have tried other lo mein recipes, and they were always 'off', most often too heavy with the sesame oil.
    I did add about a third of a yellow onion, and some broccoli florets along with the coleslaw mix. I doubled the recipe because I told my honey that I would serve him for lunch. -Now I have enough for our children (who love Chinese food) to try after school. My sweetie and I both really enjoyed it and I will plan to serve this again along with some shrimp and/or chicken added. I'm so glad that you posted the recipe -definite keeper!

  15. I made this tonight and it was so good! I didn't have green onions on hand so I chopped up red onion and sautéed them with the cabbage. Then I also subbed apple cider vinegar for rice since I didn't have any on hand. Turned out really good! I threw some chopped cashews on top before serving. Will definitely make this again.
