S'mores Popcorn


Holy cow, this popcorn is so dang good.  I grew up eating  marshmallow popcorn, but this is the first time I turned it into a S'mores version with Golden Grahams and chocolate.  Best decision EVER.  This popcorn was raved about.  Everyone loved it (even the adults). 
It's very simple to make.  You start by adding popped popcorn, mini marshmallows and Golden Grahams to a very large bowl.  Then, you make a sweet buttery mixture on the stove-top and you pour it over the popcorn mixture, so it melts the marshmallows which creates an incredibly delicious chewy popcorn. 

The nice thing is, once the mixture sets, it isn't really sticky.  So, it's easy to eat without getting your fingers all gooey and messy.

1/2 c. popcorn kernels, popped according to machine directions
3 c. mini marshmallows
2 1/2 c. Golden Grahams cereal
1 c. unsalted butter
1 1/3 c. sugar
1/2 c. light Karo syrup
1 tsp. vanilla
1/2 c. chocolate candy melts, melted (or chocolate chips) 

Pop kernels according to your popcorn poppers directions.  Place popped popcorn into a very large bowl (I use a 32-cup size bowl).  Make sure to remove all unpopped kernels.  Add the mini marshmallows and Golden Grahams cereal; set aside.  In a medium-large saucepan over medium heat melt the butter; add sugar and Karo syrup and stir until sugar is dissolved.  Bring to a boil and boil for three minutes.  Remove from heat and stir in the vanilla (be careful, it might bubble up).  

Pour the hot syrup over the popcorn and stir until popcorn is evenly coated and marshmallows are melted.  Spread out onto a large cookie sheet.  Melt candy melts in the microwave, stirring ever 30 seconds until melted.  Using a fork, drizzle chocolate over popcorn.  Allow chocolate to harden, then break into chunks and serve.  

Jenn's Notes:  My popcorn popper only pops 1/4 cup kernels at a time, so I have to do two batches.

  2. I made this yesterday for a church social where everyone was supposed to bring popcorn to share. It was definitely the favorite, the only bowl of popcoren where every bit got eaten. I did drizzle at leasdt twice as much chocolate on it as the recipe calls for, as I love chocolate, but it would have been good as you have it here too.
