Layered Cheesy Breakfast Casserole


Are you a savory or sweet breakfast person on Christmas morning?  I know a lot of people who enjoy cinnamon rolls, french toast casseroles and muffins.  Then, I know a lot of people who like savory dishes like breakfast casserole and biscuits and gravy.  "The Mr." wants me to make monkey bread this year.  Lately, my Mom makes monkey bread on Christmas morning, so we might just have to sneak some of hers.    

If you are a savory breakfast person, this breakfast casserole is delicious.  You can clean out your fridge and add any meat, veggies and cheese that you would like.  That is what I did.  You could add sausage, bacon, deli turkey, broccoli, asparagus, diced tomatoes, green chiles, Pepper Jack cheese, Feta cheese, Parmesan cheese . . . you name it and it would probably taste great in this casserole.        

All you have to do is, unroll crescent rolls and place in the bottom of a greased 9x13-inch baking pan.  Pinch seams together to seal.  
Next, top with ham, pepperoni, diced bell peppers and chopped green onions (or whatever meat and veggies you have).  
Next, add the spinach and pour the beaten egg mixture over the top.  
Last, you top with cheese and bake.  Then, you will have a warm, cheesy, layered breakfast casserole in a short 30 minutes.  

The flavor is amazing and the texture is amazing as you bite through all those yummy layers.  This casserole is even great reheated and eaten as leftovers.

Layered Cheesy Breakfast Casserole

1 (8 oz.) pkg. crescent rolls (I used reduced fat)
1 (8 oz.) pkg. thinly sliced deli ham
15 slices pepperoni
1/2 green bell pepper, diced
2 green onions, chopped
2 c. fresh spinach
8 eggs, beaten
salt and pepper
1/4 - 1/2 tsp. dried oregano, opt.
1 1/2 c. shredded Cheddar cheese

Preheat oven to 350 degrees.  Unroll crescent rolls and place in a 9x13-inch baking dish that has been sprayed with cooking spray.  Pinch seems of the crescent rolls together to seal.  Top with two layers of deli ham, the pepperoni, diced bell pepper, chopped green onions and spinach.  Season beaten eggs with salt, pepper and oregano and pour over spinach in casserole dish.  Top with shredded cheese.  Bake, uncovered, for 30 minutes.  Remove from oven, slice and serve.

    a few years ago, I wondered if I could make my own refrigerator crescent dough, my goal was to add some whole wheat flour and to know the dough didn't have any bad stuff. Now I don't have to ever buy it! And it's on the expensive side in my opinion.
