Best EVER Chocolate Chip Cookies as seen ALL Over Pinterest

I first saw these cookies over at Project Naptime and then I saw them on another blog and then another and then all over Pinterest.  I could not get away from these cookies, so I gave in and made them.

These cookies were soooooooooo good! If you like a chewy chocolate chip cookie, then this recipe is made for you!  They are so extremely chewy and soft and buttery and they stay fresh for several days.  We finished off a whole batch of these cookies between the two of us!  This is MY NEW FAVORITE recipe for chocolate chip cookies without oats (I have another favorite one with oats).

The secret ingredient is the cornstarch!  That is what makes them so chewy.   If you have any other recipes saved for chocolate chip cookies that you have been wanting to try, do yourself a favor and try this recipe first!

Best EVER Chocolate Chip Cookies
adapted from: Anna Olson

3/4 c. unsalted butter, softened
3/4 c. brown sugar
1/4 c. sugar
1 egg
2 tsp. vanilla extract
2 c. all-purpose flour
2 tsp. cornstarch
1 tsp. baking soda
1/2 tsp. salt
chocolate chips, as many as you like

Cream together butter, brown sugar and sugar until light and fluffy.  Add the egg and vanilla and beat to combine.  Combine the flour, cornstarch, baking soda and salt and add to wet ingredients.  Mix to combine and stir in the chocolate chips.  Chill dough for at least 30 minutes.  Preheat oven to 350 degrees.  Use a small cookie scoop and drop dough onto a greased cookie sheet.  Bake 8-10 minutes or until barely golden around the edges.  The key is to NOT overbake.

If you want crispy cookies, omit the cornstarch and replace the baking soda with baking powder.

**Jenn's Notes Update:  I LOVE these cookies and I make them all of the time.  If the dough looks a little crumbly while mixing, don't worry, it will come together.  I get between 27 and 30 cookies and I bake them for 10 minutes (NO LONGER).  They will look underdone, but they set up perfectly.

  13. I just made these last week and they were seriously good! they are definitely my new go-to recipe. I had no issues with crumbly dough though, but I did add a smidge more vanilla so maybe that's why. Anyways I followed the recipe almost exactly and will definitely be making these again and soon!

  15. The idea of using cornstarch intrigued me, as did refrigerating chocolate chip cookie dough, and so I had to give it a try. It was so incredibly worth it. These have taken the trophy as my new favourites. I also used a bit extra vanilla as well and they came together very nicely.

    1. I use Guittard milk chocolate chips. They are my favorite!! I used to have a different brand I liked, but ever since I tried Guittard, I can't use anything else. Just so you know - their milk chocolate chips are a little bigger than the other brands. - Jenn

  18. I planned on baking chocolate chip cookies tonight so I will be trying your recipe. I do one thing with all my CC recipes that really adds to the flavor and texture..I add a tablespoon of light molasses. I hope my son will save me at least one of these cookies, they look delicious. Liz

  19. These were awesome!
I have one suggestion - don't preheat your oven until you have finished the dough. Since it has to sit for 30 minutes in the fridge, there is no point in pre-heating until you put the dough in the fridge. :)

  20. Just wondering if the dough came out dry before baking?Mine did and the cookie dough never melted when baking, so the cookie came out crunchy and fat. When you cream the butter and sugar, how smooth should it be, can you still feel the sugar grain in the butter? Also do you need to sift the flour? I'm alittle frustrated as it did not come out right...maybe I did something wrong. Please help. Thx!

    1. The very first time I made these, I thought the dough seemed crumbly and I added a teaspoon or so of water to the dough. After that, I realized I just didn't mix the dough enough and I haven't added any water ever since. The dough will seem a little crumbly, but it will come together if you mix it a little longer.

I have never had a problem with my cookies being crunchy or fat. They have turned out perfect every time. Maybe an ingredient was accidentally missed? Or maybe something was expired?

I cream my butter and sugar until it looks really creamy and whipped looking. It will not be clumpy at all. P.S. I can only get it super creamy when I use my stand mixer. When I use a hand mixer, it never seems to get as creamy no matter how long I beat it for. Yes, you can still feel the sugar grain in the butter.

No, I don't sift the flour.

I'm sorry these didn't turn out for you, because they really are amazing. Maybe it is something to do with different altitudes. You could try adding a Tablespoon or two less flour so they aren't as dry?

    2. Thanks for the tips. I'll have to try it again as my friend has tried this recipe herself and it taste good :) I used a stand mixer but maybe I needed to beat longer. I was afraid of over beating it.

Btw, your other recipes looks scrumptious, can't wait to try them :) your blog is great!

  21. OMG These are amazing!!!!! I am a chocolate chip cookie aficionado and these are far the best I have ever had!!!! I didn't follow the recipe 100% either, I threw all the ingredients in a large bowl, then used my hand held blender then rolled them in a ball shape and flattened them out on the cookie sheet- baked for the full 10 mins and then cooled- these were so chewy and gooey and oozing chocolate- YUMMMMMM

  25. I don't usually comment on blogs about cookies but this is the best cookie recipe I have found for chocolate chip cookies. I have searched for years for a home made chocolate chip cookie that doesn't turn out bread like or too cakey. I have never been able to find a cookie with the right consistency on the outside. A cookie that has the slightly greasy/ slightly crunch exterior. Most of the time the other recipes turn out to be more of a flat muffin consistency and not anything like a cookie you would buy in a bakery.I actually gave up and refused to make them for years. They never turned out the way I hoped they would. This cookie is perfect. I truly believe that it the right texture because of the corn starch. This is my new chocolate chip cookie recipe and I just had to comment on it. Thank you, my long search for the perfect cookie recipe is over :)
