No Roll Sour Cream Sugar Cookies

Everyone could use a no roll sugar recipe.  I have another one on the blog, but it doesn't use sour cream.

This is the kind of cookie that gets better and better as days go by.

I have to admit, the first day when I made these cookies, I wasn't blown away by them.  I gave them another try on day two and they were delicious.  They had softened up a bit and the flavor had developed.  Same thing on days three and four . . . they were yummy.

They are soft and slightly chewy and have just the right amount of sweetness when topped with a creamy vanilla frosting. I stuck with vanilla extract in both the cookies and frosting, but a little almond extract would also be amazing.

Here are a few tips to have delicious and successful sugar cookies:
1.  Don't add too much flour.  This dough will be sticky and that's a good thing.  It's not meant to be rolled out, so you want it sticky.  If you add too much flour, they will be dry.
2.  Do not over bake.  Get them out of the oven when they still look underdone.  If you wait until they look done, they will be dry.
3.  When you use a room temperature cookie sheet, you will get thick soft cookies.  If you use a warm cookie sheet, that has just come from the oven, your cookies will be more flat.

No Roll Sour Cream Sugar Cookies

1/2 c. unsalted butter, room temperature
2 c. sugar
4 large eggs
2 tsp. vanilla extract
2/3 c. sour cream
1/2 tsp. baking soda
1/2 tsp. salt
3 tsp. baking powder
4 c. all-purpose flour

Preheat oven to 350 degrees.  In a large mixing bowl, cream together softened butter and sugar using an electric mixer.  Add the eggs and vanilla and mix until just incorporated.  Mix in the sour cream.  Add the baking soda, salt, baking powder and flour and mix until just combined.  Dough will be sticky.  Drop by heaping Tablespoons onto a large greased baking sheet, 12 dough balls per baking sheet.

Bake for 10-11 minutes or until edges are lightly golden, do not overbake.  Cookies will look underdone. Allow to cool on cookie sheet for a few minutes, then transfer to a wire rack to cool completely.  Repeat with remaining dough.  When cooled, top with frosting.  Makes about 3 1/2 dozen cookies.

2 sticks unsalted butter, room temperature
pinch of salt
2-3 tsp. vanilla extract, to taste
5 c. powdered sugar
milk, only if needed

Combine softened butter, salt and vanilla in a large mixing bowl and beat until creamy.  Add powdered sugar, one cup at a time, until you get a thick and creamy frosting.  If it's too thick for your liking, you can add a tiny bit of milk.  Spread over cooled cookies and garnish with sprinkles, if desired.

Gingerbread Cookie Bars with Cream Cheese Frosting

I never knew I was a Gingerbread fan.  The other day I was at the Dollar Store and there was a Crumbl Cookies next door, so I figured I'd run in and surprise the family with some cookies.  They had a Gingerbread Cookie and I got it.  I figured it would be the least favorite out of all the flavors I picked up, BUT it ended up being THE BEST.  It was seriously SO DANG good and I couldn't get it out of my head all week, so I set out to make a delicious Gingerbread Cookie at home.

I decided to go with cookie bars instead of cookies, because sometimes it's just so much easier to press all the dough into one pan, rather than make several batches of individually scooped cookies.

These bars turned out SO SO SO GOOD.  They are soft and chewy and perfectly spiced.  I love the ginger and ground clove aftertaste they leave in your mouth and you can't forget the creamy frosting on top.  It's smooth and rich and the perfect topping for these cookie bars.

These were a huge hit with my family and will definitely be made each holiday season in my house.  I mean just look at that cookie to frosting ratio . . . how could they not be a hit!

I'm already gearing up to make another batch tonight.

Orange Dreamsicle Cookies

mmm . . . mmm . . .mmm . . .

These are one of my favorite cookies.  I have been making these cookies for around ten years now and they are always a huge hit.

They are a perfect year round cookie.
The cookie is chewy and moist with a hint of freshness from the orange zest and a sweet, melt-in-your mouth feeling from the white chocolate chips.  There is just something about orange and white chocolate together that is irresistible.

Strawberry Gooey Butter Cookies

Have you ever had a cookie that was so simple to make, yet so delicious that you couldn't stop eating them?  Well, that was pretty much me with this cookie recipe.

I have a Christmas Gooey Butter Cookie recipe that is always a big hit, so I needed another version that could be made at any time during the year, but would be extra special for Valentine's Day.

These pretty pink cookies are soft and chewy and seriously irresistible.  The white chocolate chips add a nice contrast of flavor.  One batch makes around 40 cute little cookies, so they are perfect to make and share with friends (or you can eat them all) . . .

I added some strawberry extract to the cookies for a little extra boost of flavor.  Sometimes strawberry extract can be hard to find.  I ordered mine online.  It is an optional ingredient, so you can always leave it out and still have delicious cookies.

8 Tbl. unsalted butter, room temperature
8 oz. cream cheese, room temperature
1 large egg
1 tsp. vanilla extract
1 tsp. strawberry extract, opt.
1 (15.25 oz.) box strawberry cake mix
1/2 (heaping) cup white chocolate chips
1/2 - 3/4 c. powdered sugar

In a large bowl, cream together butter and cream cheese.  Add the egg, vanilla and strawberry extract and mix until combined.  Add the cake mix and mix until combined.  Stir in the white chocolate chips.  Cover bowl with plastic wrap and refrigerate for at least one hour or up to 24 hours.  I like to refrigerate mine overnight.  The longer you can refrigerate the dough the less sticky it will be.

Once dough has chilled, preheat the oven to 350 degrees.  Place powdered sugar in a small bowl; set aside.  Using a one-inch cookie scoop, scoop out dough and roll into a ball.  Roll dough ball in powdered sugar, completely covering the entire ball.  Place on a greased cookie sheet and repeat with remaining dough.  Flatten dough balls slightly and bake for 10 minutes.  Cookies will look under-done, but they will be perfect.  Allow to cool on cookie sheet for 2 minutes, then remove to a wire rack and cool completely.  Makes around 40 cookies.

Snickers Stuffed Peanut Butter Cookies

The countdown is almost over.  Christmas will be here in three days.  I finished all of my shopping on Wednesday, so I have been able to relax a little bit the past few days.

I have made several batches of peanut brittle, divinity and of course cookies.  It wouldn't be Christmas without any of those.
These soft peanut butter cookies are stuffed with my favorite candy bar . . . Snickers!

The dough uses basic ingredients you probably already have on hand and it comes together in no time.  Stuffed cookies are actually incredibly simple to make, yet they are so impressive.  It's so fun biting into a pretty cookie and getting an unexpected delicious surprise.  Let me show you how to make them.
Scoop out around 1 1/2 Tablespoons of chilled dough.
Flatten dough and place a Snickers in the center.  Fold up edges of dough around the Snickers and roll into a ball.
Roll Snickers stuffed dough ball into sugar until completely coated.  Place on baking sheet, bake, cool and drizzle with melted chocolate.  Enjoy!

I hope you all have a wonder Christmas and a Happy New Year :)

Candy Cane Kiss Cookies

Today is National Cookie Day!!  I guess that means it's mandatory to eat a cookie (or five) today, right??

Good thing, because I can't stop eating these cookies.

They are so soft and chewy and amazing.  They satisfy your sweet tooth and leave your mouth feeling refreshed, thanks to the bright peppermint flavor.
These delicious cookies are similar to a no-roll sugar cookie and they are loaded with chopped Candy Cane Kisses (hello!) and topped with a white chocolate drizzle and festive red sprinkles.  The Candy Cane Kisses add the perfect flavor to this and they are so creamy.

The white chocolate drizzle and sprinkles on top are optional, but they do look pretty plain without it.  These will jazz up that cookie plate this year and your friends will love getting a new and unique cookie.  They do taste best when eaten within a day or two.

1/2 c. shortening (I use butter-flavored)
2/3 c. sugar
1/2 c. powdered sugar
2 large eggs
1 1/2 tsp. vanilla
3 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
3 Tbl. heavy whipping cream
3/4 bag of Candy Cane Kisses, unwrapped and roughly chopped
2-3 squares almond bark
red sugar sprinkles

In the bowl of a stand mixer (or large bowl), beat the butter, shortening, sugar and powdered sugar at medium-high speed until fluffy.  Scrape the bowl, then add the eggs, one at a time, beating after each addition.  Add the vanilla and mix until combined.  In a separate medium bowl, combine the flour, baking powder and salt.  Gradually mix the dry ingredients into the creamed mixture.  Add the whipping cream  and chopped Candy Cane Kisses and mix until combined.  Cover bowl with plastic wrap and refrigerate for at least one hour.

Preheat oven to 350 degrees.  Spray a cookie sheet with cooking spray; set aside.  Scoop dough by 1 1/2 - 2 Tablespoons and roll into balls.  Place 2-inches apart on prepared baking sheet; flatten dough balls slightly.  Bake for 10 minutes, the edges should be slightly browned.  Remove from oven and cool on cookie sheet for two minutes, then transfer to a wire rack and cool completely.  Repeat with remaining dough.  Makes around 34 cookies.

For Garnish:  Place almond bark into a bowl and microwave until melted, stirring every 30 seconds.  This should only take about one minute.  Stir until completely smooth and using a fork, drizzle over cooled cookies.  Then, sprinkle with red sugar sprinkles before the almond bark hardens.  Allow to set and serve.

White Chocolate Raspberry Cookies

Yesterday was the first day of Fall!! This is the absolute best time of the year.  While everyone is sharing delicious Fall recipes like anything with pumpkin, apples or homemade soup, I have one last fruity recipe to share with you.
This is an easy shortcut recipe that can be made any time of the year.

I have been craving fresh raspberries lately.  I love that tart, yet sweet flavor.  Have you every put fresh raspberries on homemade vanilla ice cream??? Seriously - best ever!
These cookies start out with a cake mix and pudding mix, so they are pretty much guaranteed to be soft and chewy.  I added some raspberry extract to both the cookie and the icing to give them that extra boost of flavor.  I also used raspberry puree in the icing, but you can always use raspberry jam.  I just happened to have a giant bottle of raspberry puree that I bought to flavor my Diet Mountain Dew.

These cookies are delicious.

Chocolate Confetti Chip Cookies

I found the funnest thing when shopping at Walmart the other day.  Confetti Chips!  They are so cute. . . speckled white chips that almost taste like cake batter.  Of course, I bought two bags and immediately made some cookies.

I used my current favorite chocolate cookie recipe.  These cookies are soft and chewy with the perfect touch of chocolate.
I love this recipe, not only does it always produce delicious cookies, but I always have the ingredients on hand.  Plus, this recipe makes a bunch of cookies, so there is always plenty to share. However, if you don't want that many cookies hanging out in your kitchen, then you can easily cut this recipe in half.

Next time you are at the store, pick up a bag of this fun confetti baking chips and make yourself a batch of cookies.

Nutella No Bake Cookies

This recipe is back from 2012.  I decided it was overdue for some updated pics and since I make these all the time, I wanted to re-share them with all of you.

Here is my original post:
No Bake Cookies are one of those cookies that I could eat EVERY SINGLE DAY.  I have been eating them as long as I can remember and I still have never gotten sick of them.  The funny thing is, that I had been craving no-bakes for the past few weeks, but I never made them, because I thought - no one wants to see the same old no bake recipe.  Then, last night I found NUTELLA NO BAKE COOKIES.  For real!!!
What a fun twist on an old classic.  I crossed my fingers that I still had enough Nutella left in the jar - oh and I did, but only for a half a batch.  But hey, better than nothing.  They turned out delicious.  So creamy and chewy just how I like them.  We ate these things so fast and I only have one left.  These are super yummy.

1/2 c. milk
1/2 c. butter
1 tsp. vanilla
pinch of salt
1/4 c. creamy peanut butter
1/4 c. Nutella
3 c. quick-cooking oats

In a medium saucepan, combine the sugar, cocoa powder, milk and butter.  Cook over medium heat, stirring until the butter is melted and sugar is dissolved.  Bring to a boil.  Remove from heat and stir in the vanilla, salt, peanut butter and Nutella.  Last, stir in the oats and quickly drop by spoonfuls onto wax paper.  Allow to harden and enjoy.

Chocolate Peppermint Cookies

You guys . . . EVERYONE needs this chocolate cookie recipe.  It is such a good cookie.  Thick, rich, chocolaty, fudgy, chewy and delicious.  Pretty much everything you could ask for in a chocolate cookie is covered in this recipe.  Plus, you don't even have to chill the dough.  You can make and bake them right away.

These are definitely one of my favorite cookies that I have made this year.  The cookie on its own is perfect, but I was really craving some creamy frosting, so I covered these amazing cookies with a Vanilla Bean Cream Cheese Frosting and to make them extra special for the holidays, I topped them with crushed peppermint candy canes.
I cannot get enough of these cookies and my whole family loves them.

I have now been eating these for three days and they are just as good as on day one.  Make sure to store them in the refrigerator since there is cream cheese in the frosting.  You can either bring them to room temperature before eating or eat cold, straight out of the fridge.  Both ways are incredible.

Glazed Toffee Bonbons

What are your favorite cookies to make during this time of the year?  I love Red Velvet Sandwich Cookies and Chocolate Crinkle Cookies dipped in white chocolate and crushed candy canes, but I've decided to try out some new cookie recipes this month.

These Bonbons are the first unique recipe I decided to try.  What is it about mini cookies that are so irresistible?  These little bite-sized cookies are absolutely delicious.  The cookie is soft and chewy and to make them over the top, they are covered in a rich caramely glaze, a white chocolate drizzle, a chocolate drizzle and chopped toffee candy.  These cookies are rich, but I didn't find them too sweet.  You can easily eat more than one in the same sitting.
I think you and your neighbors will love these special little cookies.

(Printable Recipe)

1/2 c. unsalted butter, room temperature
1/2 c. light brown sugar, packed
1 tsp. vanilla
1 large egg
1 3/4 c. all-purpose flour
1/4 tsp. baking soda
1/4 tsp. salt
3 bars (1.4 oz. each) chocolate-covered English toffee candy, finely chopped

Glaze
1/4 c. unsalted butter
1/2 c. light brown sugar, packed
2-3 Tbl. milk
1/2 tsp. vanilla
1 1/3 c. powdered sugar
1/3 c. semi-sweet chocolate chips
1/3 c. white chocolate chips

Preheat oven to 325 degrees.  In a large bowl, cream together butter and sugar.  Mix in the vanilla and egg until smooth and creamy.  Add the flour, soda and salt and mix until just incorporated.  Reserve 1/3 of the chopped candy for garnish.  Stir remaining chopped candy into the dough.  Shape dough into 1-inch balls and place on a greased baking sheet, 1-inch apart.  Bake for 11 minutes or until edges start to brown.  Place a cooling rack over a piece of wax paper and immediately remove cookies from cookie sheet to cooling rack.  Bake remaining dough.

Meanwhile, prepare the glaze.  In a medium saucepan, heat butter, brown sugar, 2 Tablespoons of milk and vanilla over medium-low heat.  Stir frequently until mixture just comes to a boil and sugar is dissolved.  Stir in powdered sugar and whisk until smooth.  If glaze is too thick, add remaining milk.  Immediately dip tops of cookies into glaze (be careful, the glaze is hot).  Cookies don't have to be completely cooled, just firm and set.  Place on cooling rack.  If glaze starts to set in saucepan, reheat over medium-low heat and beat with a whisk until softened.

Place chocolate chips and white chocolate chips in separate small, microwave-safe, bowls.  Microwave one at a time for 1-2 minutes, stirring every 30 seconds, until chocolate is melted and smooth.  Drizzle over cookies (I like to use a fork to drizzle the melted chocolate).  Repeat with white chocolate chips.  Top with reserved crushed candy before the chocolate sets.  Allow to set and serve.  Makes around 2 1/2 dozen cookies.
